INGREDIENTS:
2 cups cauliflower florets
small red onion
4 minced cloves of garlic
1 tbsp minced fresh ginger
1 small red chile
2 cups broccoli florets
1 large carrot
1/2 red bell pepper
Juice of 1/2 lemon
chicken breast/steak
DIRECTIONS:
Pulse cauliflower florets in a food processor until finely chopped. Steam cauliflower florets until tender. Transfer to a bowl and cover.
Slice vegetables (broccoli, carrot, onion, red pepper, chile, garlic, ginger), cook, and stir, until tender (I actually put the vegetables in tinfoil and grilled them). Once tender, squeeze the lemon juice over the vegetables. Season to taste.
Grill chicken breast/steak. Once cooked, slice into thin strips.
Put a helping of cauliflower in a bowl, then top with vegetables and meat.
